In hopes to get everyone into sharing recipes, I have decided to have a theme for the week. I want all your favorite recipes to be posted by next Friday. There are lots of themes we can work with: casseroles, crockpot, cupcake, cookie, bread, muffin, roll, soup, salad, appetizer, you name it!!! This can be fun if everyone plays along.
My sister called me a couple of days ago wanting to know what she could make with ground beef. It couldn't be meatloaf, spaghetti ot tacos. This got me to thinking. How much variety do I really have when it comes to ground beef??? Not as much as I would like.
The theme for this week is: Ground Beef
I got this from a recipe exchange in the ward. My sister's family loved it--as does mine.
Enchilada Casserole
1 lb hamburger--cooked and drained 1 10 oz pkg corn chips – reg or scoop
1 15 oz can chili with beans 1 C sour cream
1 8 oz can tomato sauce 1 C grated cheddar cheese
1 10 oz can mild enchilada sauce
Mix enchilada sauce, chili, tomato sauce, and hamburger together in a 2 quart casserole dish. Take out 1 ½ C of corn chips and set aside. Then add the rest of the corn chips to the sauce mixture. Bake uncovered at 350 degrees for ½ hour. Add in layers: sour cream, cheese, and crushed up corn chips. Bake for 10 more minutes. YUMMMMM

Butterscotch Blondies
These are so yummy!! I have been craving butterscotch lately and these fit the bill.
Butterscotch Blondies
3/4 cup butter or margarine, softened
3/4 cup packed brown sugar
1/2 cup sugar
2 eggs
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 10 oz bag of butterscotch chips
Cream butter and sugars, add eggs. Slowly add dry ingredients, mix well. Stir in butterscotch chips. Spread into greased 9x13. Bake at 350 degrees for 30-35 minutes.
*Serve warm with a scoop of vanilla ice cream and warm carmel sauce for a yummy dessert.

It's been too long since I have posted--or anyone else for that matter. Here's what our menu for the week looks like:

Monday: Turkey tetrazzini, green beans and fruit
Tuesday: Nachos (a favorite for the kids)
Wednesday: Turkey Patties (a new recipe), rice. veggies and salad
Thursday: Creamy Ham topping, Baked potatoes, Salad, Rolls
Friday: Turkey hash, Rolls, & jell-o
Saturday: Chinese Chicken Salad and Breadsticks
