German Apple Cake

This is my new favorite dessert.

German Apple Cake

2 eggs
1 cup oil
2 cups sugar
2 cups flour
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 Tbls. vanilla
4 cups apples, peeled, cored & diced (about 4 large)

Frosting:
8 oz. cream cheese, softened
3 Tbls. butter, softened
1 3/4 cup powdered sugar
1 tsp. vanilla

Beat egg and oil for a couple minutes, add dry ingredients, mix well. Add apples and vanilla, mix until well blended. Pour into a greased 9x13. Bake at 350 degrees for 45-50 minutes.
Frosting:
Beat cream cheese and butter until fluffy, add powdered sugar and vanilla. Spread over cooled cake.

Things I Have Learned

It has been just over a week since I went on the wheat free and soy free diet with Noah. Coming up with meals has sometimes been so hard that it made my head hurt. But I have learned a few things in this short time.

* Brown Rice pasta tastes pretty good, but isn't as pretty as semolina.
* Wheat free/Soy free bread is hard and dry. Not bad for french toast, but not a great sandwich.
* Trader Joe's is the place to get your brown rice pasta. They also carry a rice cracker that works for us.
* There are many choices for cereal: Cap'n Crunch, Fruity Pebbles, Trix, Honeycomb are just a few. There are not many "healthy" options. There were times when I have been tempted to just go to the all cereal diet. It would be much easier.
* Having a child with food allergies is not the cheapest way to go.
* Wheat free/Soy free does not mean low fat.
* You can get sick of mexican themed food, when all you can eat is corn tortillas.
* Tomato soup has flour in it. As do cream soups and onion soup mix.
* Many chilis have flour in them.
* Soy sauce has wheat in it.
* I lasted a week before really craving a cupcake, cookie or slice of pizza.

I bought a couple of cookbooks this weekend and will be experimenting with some of the recipes this week. We will be introducing soy into the diet starting Friday. Seems as though that list is shorter than wheat's. Feel free to suggest any recipes or foods that you love that are wheat and soy free!!!

Parmesan Ham Pasta

This picture really doesn't do this dish justice. I think that brown rice pasta isn't as pretty as semolina pasta. But thankfully the flavor is good. This recipe is a family favorite that I adapted to fit Noah's needs. When Anna was little, she loved this so much we named this Annaham'n'noodles. Once again the kids had multiple servings. And Noah has had salad two days in a row. Parmesan Ham & Noodles

1/4 cup butter
1 cup whipping cream
1 cup Parmesan cheese
garlic salt & pepper
ham
about 8 cups pasta ( I used brown rice fusili)

Bring water to a boil, add pasta.
Melt butter, add cream. Bring to a boil and boil 2 minutes. Add Parmesan cheese, garlic salt, pepper and ham. When pasta is done, add to sauce and toss.

This is super fast. It is done as soon as the pasta is.

Buckwheat Pancakes

Even though it says Buckwheat, these are wheat free and soy free. We tried them first without blueberries and preferred them with blueberries. Noah had 5 pancakes, Isaac had 3 and both Abby and Anna had 2. Kevin said he liked them better than plain pancakes. Buckwheat Blueberry Pancakes

1 cup buckwheat flour
1 1/2 cups Bob's All Purpose Flour (wheat free, soy free)
3 T sugar
1/2 t baking powder
2 1/2 t baking soda
1/4 t xanthan gum
1/4 t salt
1 T butter, melted
2 t vanilla
2 cups buttermilk
up to 1 cup milk
1 egg
Mix dry ingredients. Blend wet ingredients, reserving 1 cup milk. Combine wet ingredients to dry ingredients, adding reserved milk until desired consistency.

Wheat Free Dessert

This is what we had for dessert tonight. The brownies came from Trader Joe's--wheat free, gluten free and dairy free. They were extremely rich. I added chocolate chips, but the chocolate flavor was so good, they were just a pleasant addition. Served warm with a scoop of vanilla ice cream, it was yummy!!! For dinner we had turkey burgers--animal style, as friends call them. Noah even ate his lettuce. I thought that without a bun, you could actually taste the meat much better.

The kids loved the mac & cheese so much that the 9x13 was gone by the end of lunch. I made another one today so Kevin could have some leftovers for next week and fixing something for Noah's lunch would be quick, easy and not take much thought. I used the brown rice pasta this time and of course we had to do the taste test. Nobody could say that they liked the brown rice or quinoa pasta more. We found brown rice noodles at Trader Joe's at much more reasonable rates. So we will probably eat more of the brown rice pasta. The one nice thing about the quinoa is that is is a complete protein in and of itself and has great nutritional qualities. So on a meatless dinner day, I will probably opt for quinoa.

Cooking Wheat Free and Soy Free

We have just begun our 2 week completely wheat and soy free diet. Because I feel that diets work better with support, I am joining Noah in going completely free for the next 2 weeks. Then slowly I can start introducing wheat into his diet. When we figure out how much he can handle on a daily basis, we will do the same thing with soy. It's definitely going to be a challenge. But I have already found a wheat flour substitute to use as a thickening agent. White Rice Flour. I made the Creamy Ham topping ( see January posting for recipe) for baked potatoes last night and we couldn't tell the difference. Tonight I made Macaroni & Cheese with Quinoa noodles and used rice flour in the cheese sauce. We haven't eaten baked yet, but the taste before it went into the oven were yummy. I have decided one good thing to come from this will be that it will sever my dependence on processed flour. Not to mention forcing us to quit our fast food addiction. It will be interesting to see how we feel at the end of 2 weeks and what I will be craving.
The kids loved this so much they had seconds and thirds. We couldn't tell a difference. These are the muffins. The texture was different from what we are used to. It is a much more dense bread, but the flavor was good.

And they were chock full of fresh blueberries. That helped.The all purpose flour that I used was from Bob's Red Mill and it gives me hope for pizza, cookies and other yummy things we were taking for granted.

Chocolate Eclair Torte

Quick and easy. Totally tasty!! Way better than ones with graham crackers.

Chocolate Eclair Torte

1 cup water
1/2 cup butter (no substitutions)
1/4 t. salt
1 cup flour
4 eggs
8 oz. cream cheese, softened
2 sm. packages instant vanilla pudding
3 cups cold milk
whipping cream or Cool Whip

Bring water, butter and salt to a boil. Add flour all at once and stir until smooth ball forms. Remove from heat, set aside 5 minutes. Add eggs, one at a time, beating well after each one. Spread into greaded 9x13, bake at 400 degrees 30-35 minutes. Cool completely. Mix cream cheese, pudding and milk until smooth. Spread over pastry, top with whipped cream. Drizzle with chocolate syrup, if desired. Store in fridge.

Orange Sauce for Angel Food Cake (this is soooo good and low in WWpoints)

2 cups water
3/4 cup orange juice concentrate
1 sm. package instant vanilla pudding
1 cup whipping cream

1 angel food cake

Whip cream. Combine water, o.j. and pudding. Beat on low until and then high for 2 minutes. Fold in whipped cream. Spoon over cake. Yummmmm!!!!!!

Santa Fe Chicken Salad

1/2 package fajita seasoning mix
2 lbs. chicken breasts
1/4 cup water

marinate all day. Then bbq.

tortilla chips
lettuce
1 green and 1 red pepper, chopped
1 c. frozen corn
1 can black beans
grated cheese
diced tomatoes
chopped onions to taste

dressing:
2 parts ranch dressing
1 part salsa

layer ingredients on plates. put chicken slices on top and add dressing.

Cream Cheese Chicken Sauce

1 envelope italian salad dressing mix
1 stick butter or margarine
6 boneless skinless chicken breast
1 can cream of chicken soup
1 8oz. cream cheese

turn crock pot on high. Place butter in botton of crock pot. When the butter has melted, add one envelope italian dressing dry mix. Stir into butter until well mixed. cut chicken breasts into 1" strips. Place in crock pot and stire to coat with butter and dressing mix.
cover and cook on high for 2 hours. remove chicken to plate. Add 1 can cream of chicken soup and cream cheese. Stir to melt and mix well until smooth and creamy. Add chicken back to sauce until hot and bubbly.
serve over mashed potatoes, rice or hot buttered noodles.

Egg Rolls

2/3 cup chopped celery
2/3 cup chopped carrot
1/2 green pepper diced
2 cups shredded cabbage
1/2 teasp. olive oil
2/3 cup chopped onion
1 teasp. minced, peeled fresh ginger
2 garlic cloves, minced
2 large chicken breast (Costco's teriyaki chicken breasts work well too)
1 1/2 Tbsp. low-sodium soy sauce
1/4 teasp. black pepper
14 egg roll wraps
egg white
cooking spray

sauce:
3/4 cup low sodium soy sauce
6 Tblsp. rice vinegar
2 Tbsp. dark sesame oil
1 Tbsp. minced peeled fresh ginger
1/3 cup thinly sliced green onions

preheat oven 425.

combine celery, carrots and cabbage. cover with plastic wrap and microwave 5 minutes. Drain

Heat oil in skillet, medium heat. Add onion, green pepper, garlic and ginger. saute 2 minutes. remove from heat, stir in cabbage mixture, soy sauce and pepper. cover and chill 15 minutes.

1 egg roll at a time. Spoon 3 Tblsp. misture into center. Fold like burrito, moisten corners with egg white.
Coat with cooking spray seam side down on baking sheet. Bake at 425 for 18 minutes.
Dip in sauce.

WW points: 3 egg rolls= 5 points

Recipes of the Week

This week the theme is going to be Chicken since Arah says she has lots of yummy recipes. Just let me know if you need to be reinvited to add your recipe!!! If you have more than one, feel free to share all of them!!!

Just in case there are a few of you out there that do not have my yummy potpie recipe, I will be using that.


Chicken Pot Pie Makes 2
2 c. diced, peeled potatoes
1 3/4 c. sliced carrots
1/3 c. chopped onion
1 c. margarine
1 c. flour
1 3/4 t. salt
3/4 t. pepper
1 t. thyme
3 c. chicken broth
11/2 c. milk
4 c. cooked, cubed chicken
1 c. frozen peas
1 c. frozen corn
pastry for 2 double crust pies

Boil potatoes & carrots 8-10 min, covered. Drain, set aside. Saute’ onion in margarine until tender. Stir in flour, slat pepper and thyme until blended. Gradually stir in broth & milk. Bring to a boil. Cook and stir for 2 minutes or until thickened. Add chicken and veggies. Remove from heat.
Line 2 deep pie plates with bottom pastry, trim even with edges. Fill with chicken mixture. Roll out remaining crust to fit top of pie. Cut slits– place over top, trim, seal & flute edges. Either freeze or bake @425 35-40 minutes, let stand 15 minutes. If frozen, shield edges with foil, place on cookie sheet, bake @425 30 minutes, then @350 70-80 minutes, let sit 15 minutes. Enjoy!

Recipes of the Week

In hopes to get everyone into sharing recipes, I have decided to have a theme for the week. I want all your favorite recipes to be posted by next Friday. There are lots of themes we can work with: casseroles, crockpot, cupcake, cookie, bread, muffin, roll, soup, salad, appetizer, you name it!!! This can be fun if everyone plays along.

My sister called me a couple of days ago wanting to know what she could make with ground beef. It couldn't be meatloaf, spaghetti ot tacos. This got me to thinking. How much variety do I really have when it comes to ground beef??? Not as much as I would like.

The theme for this week is: Ground Beef

I got this from a recipe exchange in the ward. My sister's family loved it--as does mine.

Enchilada Casserole
1 lb hamburger--cooked and drained 1 10 oz pkg corn chips – reg or scoop
1 15 oz can chili with beans 1 C sour cream
1 8 oz can tomato sauce 1 C grated cheddar cheese
1 10 oz can mild enchilada sauce
Mix enchilada sauce, chili, tomato sauce, and hamburger together in a 2 quart casserole dish. Take out 1 ½ C of corn chips and set aside. Then add the rest of the corn chips to the sauce mixture. Bake uncovered at 350 degrees for ½ hour. Add in layers: sour cream, cheese, and crushed up corn chips. Bake for 10 more minutes. YUMMMMM

Butterscotch Blondies

These are so yummy!! I have been craving butterscotch lately and these fit the bill.

Butterscotch Blondies

3/4 cup butter or margarine, softened
3/4 cup packed brown sugar
1/2 cup sugar
2 eggs
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 10 oz bag of butterscotch chips

Cream butter and sugars, add eggs. Slowly add dry ingredients, mix well. Stir in butterscotch chips. Spread into greased 9x13. Bake at 350 degrees for 30-35 minutes.

*Serve warm with a scoop of vanilla ice cream and warm carmel sauce for a yummy dessert.

Taco Soup

Here you go Mary.

Taco Soup

1 pound ground beef or chicken, cooked
2 cans kidney beans, drained
1 can corn, drained
28 oz. can diced tomatoes (I put mine in the blender so my kids will eat them)
15 oz. tomato sauce
3 cups water
1 package taco mix
1 package ranch mix

Mix all together and simmer 30-45 minutes or put in crockpot and cook on low 6-7 hours (this is how I do it--I make it the night before).

Top with shredded cheddar cheese and crushed tortilla chips.

Creamy Ham Topping

I promised I would post this and finally I am getting to it. It is yummy, my kids love it and are always happy to see it. It is quick, easy and only 7 points on Weight Watcher's (that includes the potato!)

1/4 cup margarine
1/4 cup flour
2 cups fat free milk
1/4 cup fat free half and half
1 T parsley
1 chicken bouillon cube
1/2 tsp. Italian seasoning
1/4 cup Romano or Parmesan cheese

Melt margarine in saucepan, stir in flour. Slowly add milk and half and half. Stir and heat until boiling, until thickens. Add remaining ingredients. Can either serve right away or keep in crockpot on low for no more than 3 hours. Serve over baked potatoes.

Since this is a favorite I always double and for leftovers I will triple.

I serve this with a Green Salad and Breadsticks. Enjoy!!

What's for Dinner???

Here's what we are eating this week.

Sunday: Clam Chowder, Chili and Chicken Noodle Soups (All homemade), Tortellini Caeser Salad, Pinenut and Poppyseed Salad, a Veggie tray and Rolls. We had a friends for dinner last night. I also made a 4 layer Chocolate Cake with a Chocolate Mousse filling (I had it at Kevin's surprise party for those who can remember).

Monday: Leftover Soups and Salad--so we can go to the movie (We have a theater that only charges 50 cents on Mondays.

Tuesday: Spaghetti and Meatballs, Salad, Green Beans and Garlic Bread

Wednesday: Pork Roast, Mashed Potatoes, and Corn (Noah's request)

Thursday: German Pork Stroganoff, Breadsticks and Salad

Friday: Bratwurst, Pasta Salad and Chips (Isaac's request)

Saturday: Kevin is on call again and we will be heading to Portland for the day. I am going to go the temple and then we are off to IKEA.

Yummy Chili

My friend Karen has requested some healthy meal recipes in her quest to get healthier. I think it is hard to find family friendly and lower fat meals. But this chili recipe is super yummy and easy to make. The kids love to take it in their thermos for lunch. It is 5 Weight Watcher points per 1 cup serving.

Chili

2 pounds lean ground beef
1 can (46 oz) tomato juice
2 cans (15 oz ea.) tomato sauce
2 cans (15 oz ea.)kidney beans, drained
1 cup chopped onions
1/2 tsp sugar
1/2 tsp oregano
salt and pepper
1 1/2 tsp cumin
1/4 cup chili powder (you can use more or less depending on your taste)

Brown ground beef and onion, drain. Mix all together in crockpot and cook on low 8 hours. You can also cook this on the stove top and simmer for 1 1/2 hours.

What's for dinner?

We are just getting back into our routine and back on track with eating dinner at home. Here's what's for dinner at our house this week.

Sunday: Ham, Cheesy potatoes, Peas, Whipped cream fruit salad (something I always had at my Grandma's house with ham growing up. I doubt there's nutritional value, but it tastes good!) Mud Pie for dessert and F.H.E. Treat.

Monday: Ham and Cheese Omlettes (the kids make their own using the ziplock baggie method), Hashbrowns, Cinnamon Raisin English Muffins, Hot Chocolate

Tuesday: Creamy Ham Topping over Baked Potatoes (only 7 points on W.W.'s), Broccoli, Rolls and Green Salad made with Romaine

Wednesday: Cheesy Ham Chowder in Bread bowls and Green Salad

Thursday: Annaham'n'noodles, Green Beans, Breadsticks and Caeser salad

Friday: Sweet and Sour Chicken, Fried Rice, Egg Rolls and Egg Foo Young

Saturday: Sliders with grilled onions on whole wheat buns, Homemade Baked Beans and Warm Potato Salad
